Week 1 Results



Hey fit fam! So as you all know, today is day 7 of our 21 day fitness program! Here are my results!

Day 1: 179.9




Day 7: 174.3

Down 5.6 pounds over all and 11 inches total! It's amazing how one week of dedication can change your body so drastically! Most of the weight was definitely inflammation and bloat from my trip to New Orleans, BUT my arms and legs have been so SORE from this new workout and I loooove it! I feel so much better and have more energy again. I was so drained from NOLA guys!

Well we have a busy day ahead! It's my sister-in-law's birthday so we get to go celebrate over there and Cami gets to see her cousins. Here's to staying on track! ;)

Avocado Brownies

Guys! These brownies have NO added sugar and are still SO delicious! Camilla loved them so that's a big win in my book! Let me know if you try them :) 



Ingredients
  • nonstick cooking spray
  • 1 medium ripe avocado, mashed
  • 1/4 cup extra-virgin coconut oil, melted
  • 1 large egg, lightly beaten
  • 1/2 cup pure maple syrup
  • 1 tsp. pure vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1/2 tsp. sea salt (or Himalayan salt)
  • 1/4 cup gluten-free flour (I used whole wheat)
  • 1/3 cup dark chocolate chips
Directions
  1. Preheat oven to 350° F.
  2. Line an 8 x 8-inch baking pan with aluminum foil. Lightly coat with spray. Set aside.
  3. Combine avocado, oil, egg, maple syrup, and extract in a medium bowl; mix well. Set aside.
  4. Combine cocoa powder, salt, and flour in a medium bowl; mix well.
  5. Add cocoa powder mixture to avocado mixture; mix well.
  6. Add chocolate chips; mix until blended.
  7. Pour batter into prepared pan; spread to make even.
  8. Bake for 33 to 36 minutes, or until toothpick inserted in center comes out clean.
  9. Cool for an hour before removing from pan. Cut into 8 squares.

Cauliflower Fried Rice


 

This recipe was amazingly and surprisingly EASY! I totally give it a 10/10 but don't recommend it to anyone that has a texture food thing. Trev thought it was okay but Cami gobbled up a whole plateful! I loved it and it was yummy the next day for lunch leftovers! I also made extra cauliflower rice and froze some for next time I feel like using it!

Ingredients:
  • 1 medium head cauliflower
  • 1 egg
  • 2 tbsp cooking oil (divided)
  • 1/2 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 cup frozen peas and frozen carrots
  • 2 tbsp soy sauce (use tamari if you want GF)
  • 1/2 tsp sesame oil
  • fresh cracked black pepper to taste
  • 2 green onions, diced
  • kosher salt, optional
  • more option veggies: celery, broccoli, corn, spinach (I stuck to peas and carrots!)

Directions:
  1. Mince cauliflower into very small crumbled pieces, resembling the size of rice or larger because the cauliflower shrinks as you cook it. I actually used a food processor but it can be done without one. Make sure if you use a food processor that you don't let it get too mushy!
  2. Heat large skillet on medium high heat. Add olive oil, then add onion and garlic. Cook until soft and translucent.
  3. Add cauliflower and sauté until tender, but not mushy soft. Add peas and carrots and stir until combined.
  4. Add beaten egg, soy sauce, sesame oil, and black pepper. Stir until the egg coats all of the cauliflower and becomes cooked. 
  5. Add kosher salt to taste if needed. Add green onions and stir until everything is combined. 
  6. Serve warm. Voila!

Back on Track!

I'm FINALLY back into my routine! This past month I stuck to the 21 day fix nutrition plan but did the DVD workouts occasionally and instead, went to the gym and did some cardio or a class! 

I will say, that I noticed WAY better results (physically) when I did the 21dfx workouts. After the round was over, I felt stronger and saw my body more defined. With this round, I feel good but not necessarily stronger or toned. 

Anyway, I'm proud to say that I lost 11 pounds and 7.9 inches overall! It feels so good to finally be back in my actual routine!

My next group starts in 10 days: Monday, October 3rd! I'm so excited!!!! 1) We're starting the Insanity program! 2) I get to do it with my bestie that I haven't hung out with in FOREVER, Megan!!!!! 3) I love me some Shaun T :D

I'm using the challenge tracker app this time to run my group! You log your Shakeology and workouts on it so it really helps me stay on track! I'm the type of person that likes checking things off my checklist so it DEFINITELY keeps me going :)

Zucchini Tots

Okay so my awesome sister-in-law tagged me in a video for zucchini tots on Buzzfeed's "Tasty" series. Me being the crazy lady that I am decided to read all the reviews about the recipe before making it. I tweaked it to my liking and the verdict...Camilla and I REALLY enjoyed them! BUT...Trevor, not so much. As soon as I took the first bite I KNEW he wouldn't like them. He's a super taster and weird about textures so I knew it wouldn't sit well with him that these weren't really "tots." You have to eat them with the mindset of not tot, but different way to eat a veggie. Anyway I'll shut up - here's the recipe (the way I tweaked it)!

Ingredients
4 medium zucchini 
3/4 cup breadcrumbs 
3/4 cup shredded cheddar cheese
1 egg
1 tablespoon garlic powder 
1/2 teaspoon black pepper

Directions
1. Preheat oven to 400F. 
2. Grate zucchini and then squeeze all moisture out. **original recipe called for salting zucchini generously and letting sit for 20 minutes to retain the moisture but I didn't want to add that much salt***
3. Add breadcrumbs, cheddar cheese, egg, garlic powder, and pepper. Mix well.
4. Use a tablespoon to measure out and form into tots. Place on a greased baking tray/pan/whatever!
5. Bake for 20-25 minutes or until golden brown.

No Bake Energy Bites

I call them power balls HA! I laugh to myself every time I say it!



These are seriously SO easy and so tasty! I could compare it to some delicious cookie dough. It's the perfect snack for when you REALLY want something sweet but don't want to pick something baaaad. Let me know what you think. This recipe yields about 20! Only ONE a day 😉 oh an try to hide them so nobody else eats them. ;)

Ingredients:
1/2 cup all natural peanut butter, creamy
1/3 cup raw honey 
1 tsp vanilla extract 
1 cup rolled oats, raw
2/3 cup sweetened shredded coconut 
1/2 cup ground golden flaxseed meal
6 tbsp mini chocolate chips 

Directions:
Mix peanut butter, honey, and vanilla extract first. Add everything else and stir until fully coated. Refrigerate or freeze for a few minutes so that they set and are easier to shape (I skipped that step the first time I made it but found its easier if I do it). Roll into 1-inch balls and make sure to store in an airtight container in the fridge! :) 


It also said to toast and cool the coconut but who has time for that?!? If you do, go for it! Either way, they're still fabulous!

Results!

So I wasn't going to post my results because they were so small and I thought, crap I can't share that with people! I'm a coach and these aren't results that anyone would be impressed by!

But you know what I realized? Progress is progress! It's what I preach every day to my challenge groups and sometimes I just need to remind myself too. It might not have been 15 pounds like my first round of the Fix but it's still one step closer to my goal than I was before. 

After this round, I lost 3 pounds and 2 inches. I skipped a lot of my DVD workouts (okay, I only did them the first 3 days...😳) and replaced them with walks with Cami. Although that's still exercise, it definitely wasn't what I was doing before. But HEY! Watching what I'm eating and sticking to this lifestyle change is still giving me results! I'm so happy that at least I still lost weight, even if it wasn't a massive change. 

BUT...you know I love my but's 😉

Summer is creepin'. And it's creepin' FAST! We're going to Cancun in July and I definitely need to shape up. I want to be able to rock a swimsuit and run around with Cami without having to worry about my arms flapping around in the wind!! 😂

I don't want - I NEED - some people to join me in getting fit and staying committed. No cheats and no straying. This exclusive group is going to start on the 16th so it gives you time to get your program and get all your questions answered before we start! 21 days people...21 days to get our butts in gear. Crockpot Beef & Broccoli

Crockpot Beef & Broccoli


Ingredients

  • 2 lb. beef, thinly sliced (flank steak is ideal, but any cut will work)
  • 1 can beef broth
  • 1/2 cup low sodium soy sauce
  • 1/3 cup maple syrup
  • 1 tbsp minced garlic
  • 1 tbsp sesame oil
  • 2 tbsps cornstarch
  • 4 cups fresh broccoli (frozen broccoli florets work too)
Directions

  1. Put the sliced beef in the bottom of the crockpot. 
  2. Mix together the broth, soy sauce, maple syrup, garlic, and sesame oil. Pour over the beef. 
  3. Cook on low 5-6 hours or high 3-4 hours.
  4. Remove about 1/4 cup of the sauce from the crockpot and mix with the 2 tablespoons of cornstarch. Stir back into the crockpot. 
  5. Add the broccoli, story again, and cook for another half hour. In the meantime, cook the brown rice.
  6. Serve beef and broccoli over brown rice and enjoy! :)

Meal Prep: Where do I start!?

Does the thought of prepping meals for an ENTIRE week kinda overwhelm you!? Don't worry, it did for me too! I thought, there's NO way I'm going to be able to make a whole week's worth of food!

Well guess what? You don't have to! Here's a short guide to get you started with some meal preppin' ;)

But FIRST. Why should you even meal prep!? Some reasons are:

  • Help you with portion control
  • Achieve your fitness goals
  • Save money
  • Super convenient
  • Keep you on track
  • and SO much more!


Step 1: Choose a prep idea.
Start simple! Stick to something that doesn't require any complicated cooking techniques or something that doesn't need to many ingredients. Start off with just prepping for one meal (for example, lunch every day at work). You can gradually build up to prepping multiple meals for each day!

Step 2: Make a grocery list.
Buy ONLY what you'll need for a week's worth of prep. This saves you money and keeps you from eating other stuff that you didn't plan for. Determine exactly how much of each thing you need to buy based on what you need to prep.

Step 3: Get your containers.
Use existing tupperware or buy some new stuff! I know getting new containers really got me excited to use them (I'm lame, I know!!). Try to use containers big enough to fit a whole meal and that stack easily. I prep my food in separate containers because Trevor is on a different meal plan than I am and needs more protein so it's easier for us to do it this way. Pack your food up in a way that's convenient for YOU

Step 4: Start prepping. 
Make some time in your day (and space in your kitchen) and get going. It's really important that you set aside this time so that you don't feel rushed or skip it altogether. I usually prep on Sunday or Monday BUT sometimes I do it on Tuesday depending on how I plan my schedule. It will start to become a habit and you'll realize how much time and money you're actually saving. I find that even pre-cutting my veggies (onions, peppers, mushrooms) REALLY help when I want to make a quick salad or sauté some fresh veggies!

Step 5: Stick to your plan.
The hard part is over! Now enjoy all your extra time and enjoy your home cooked meals ;) take note of what works and what doesn't so that next week, you know what to do or not do!

I hope this gave you a good starting point! :) Remember, don't be too hard on yourself if you find this challenging in the beginning. Meal prepping isn't about perfection, it's about improvement!

Turkey Meatballs

Okay who doesn't love a big plate of pasta with some delicious sauce!? My family is Italian and I love my pasta but I learned how to eat it in a cleaner way :) You can make these deeeelicious meatballs with any red sauce, but I use a 21 day fix approved sauce and the link is below!





Ingredients

  • 1/2 cup whole wheat bread crumbs
  • 1/4 cup unsweetened almond milk
  • 2 tsp. olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 2 lbs. raw ground 93% lean ground turkey
  • 2 large eggs
  • 1/4 cup fresh parsley, finely chopped
  • 2 tbsp. grated Parmesan cheese
  • 1 tsp. dried oregano leaves
  • 1/2 tsp. Himalayan salt
  • 1/2 tsp. ground pepper
  • 4 cups homemade spaghetti sauce (<-- click for recipe)

Directions
  1. Preheat oven to 425 F.
  2. Get a large baking sheet and line with parchment paper lightly coated with cooking spray.
  3. Place milk and bread crumbs in a small bowl and let soak for 10 minutes.
  4. Heat oil in a medium skillet over medium-low heat.
  5. Add onion; cook, stirring frequently, for 5 to 6 minutes or until onion is translucent.
  6. Add garlic; cook, stirring frequently, for 1 minute.
  7. Combine onion mixture, turkey, eggs, parsley, cheese, oregano, salt, pepper, and bread crumb mixture in a large bowl. Mix well with a wooden spoon or clean hands. Refrigerate, covered, for 1 hour.
  8. With clean, wet hands, form turkey mixture into 1-inch meatballs. It'll make roughly 40 to 45 meatballs. 
  9. Bake for 13 to 18 minutes, or until browned and cooked through.
  10. Serve topped with spaghetti sauce over whole-grain pasta.

Homemade Spaghetti Sauce

Delicious sauce that tastes just right - and without all the bad stuff! :)


Ingredients
(Serves 12, approx. 1/2 cup each)

  • 2tbsp. olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, finely chopped
  • 1 (6-oz.) can tomato paste, no salt added
  • 1/2 cup red wine
  • 2 cans (28-oz. each) whole peeled tomatoes
  • 2 tbsp. agave nectar
  • 1 tsp. Himalayan salt
  • 1/4 tsp. groundblack pepper
  • 1 (3-oz.) Parmesan cheese rind (or parmigiano)
  • 3 tbsp. finely chopped fresh basil
Directions
  1. Heat oil in large saucepan over medium-high heat.
  2. Add onion; cook, stirring frequently, for 5 to 6 minutes, or until onion is translucent.
  3. Add garlic and tomato paste; cook, stirring constantly, for 2 to 3 minutes. Don't let the tomato paste burn!
  4. Add wine; cook, stirring constantly, for 2 to 3 minutes.
  5. Add tomatoes, agave, salt, and pepper. Bring to a boil, stirring frequently. Reduce heat to low, gently boil, stirring occasionally, for 3 minutes.
  6. Add cheese; cook, stirring occasionally, for 1 hour.
  7. Add basil; mix well.
  8. Serve with turkey meatballs (<-- click for recipe) over whole-grain pasta.

Macaroni & Cheese with Chicken & Broccoli

You're going to LOVE this one! A pretty AMAZING substitute for regular fatty-but-yummy mac and cheese. I got the recipe from Autumn Calabrese's Fixate but tweaked it a bit! Not gonna lie, I was pretty disappointed when we didn't have leftovers!


Ingredients
  • 4 oz. dry whole wheat macaroni or pasta
  • 4 tsp. extra-virgin organic coconut oil (I used that but you could also use organic grass-fed butter)
  • 2 tbsp. whole wheat flour
  • 11/2 cups unsweetened almond milk
  • 11/2 cups grated extra-sharp cheddar cheese
  • 3 cups cooked chopped chicken breast
  • 4 cups steamed chopped broccoli
  • 1 tsp. Himalayan salt
  • 1/2 tsp. ground black pepper
Directions
  1. Cook macaroni and set aside. Don't add salt to it.
  2. Melt coconut oil in a large saucepan over medium heat.
  3. Add flour; cook, whisking constantly, for 1 minute or until brown. Don't let it burn!
  4. Sloooowly which in almond milk; cook, whisking constantly, until there are no lumps (1 to 2 minutes).
  5. Reduce heat to low and add cheese. Whisk constantly for 2-3 minutes or until completely melted.
  6. Add chicken, broccoli, salt, and pepper. Stir until heated through.
  7. Serve! I mixed the noodles in with everything but if you want you can just top your noodles with it.
Serves: 8 (2 cups each)
Container Equivalents (per serving): 1/2 G, 1/2 Y, 1/2 R, 1 B, 1/2 tsp.

Eating Clean While Eating Out

Did you know that eating out is about THREE times the amount of calories that you would consume making dinner at home!?



When I first started eating clean I had so much trouble whenever anyone asked me to go out for dinner or lunch. I didn't want to be rude and say no but I also didn't want to go and eat enough calories to last me my next 3 days. These following tips help me TREMENDOUSLY to stay on track and still enjoy myself :)

Tip #1: Pick the restaurant! Stay away from big chain restaurants (Chili's, Cheesecake Factory, etc.) and try a smaller place. Look up the menu in advance and see if there are any yummy foods that still keep you eating healthy.

Tip #2: NEVER leave the house starving. When that waiter walks by with that basket of bread and asks if you want a roll, it's way easier to say no if you had a little something before you leave your house. Even a full glass of water or a piece of fruit so that you're not famished!

Tip #3: Avoid foods that have the words "crispy", "buttery", "breaded", "smothered", or "covered in cream sauce." I think this tip speaks for itself ;)

Tip #4: Ask about their soups. Soups are usually filling, easy, and don't come with extra sides. Go for a broth based soup and avoid any cream soups.

Tip #5: Before your entree hits the table, decide how much of it you're going to eat. "I will be done when I eat a quarter of my entree, and all of my greens."

Tip #6: Going back to Tip #3, if you absolutely, really want to get an entree with one of those words, ask the waiter if they can hold the butter or oil. Almost everything can be modified for you. I worked in the service industry so I definitely can vouch for this one ;)

Tip #7: Eat the foods with the lowest calories on your plate first.

Tip #8: When you're done, put your napkin over your plate. This helps prevent you from picking at it and signals the waiter that you're done so he/she can take the plate. If you want to take it home, I suggest asking for a box as soon as the entree is dropped so that when you decide you're done you don't have to wait on the waiter (haha, unintentional pun).

Tip #9: Follow the three bite rule. If there's something that's completely unhealthy but you just HAVE to have it, take 3 bites. The first bite is because this is delicious and I love sweets and I'm going to eat this! The second bite is because I am ENJOYING it and I can control myself. And the third bite, is because I'm satisfied.

And last but not least...

Tip #10: Watch the cocktails!!! Each cocktail has tons of sugar and empty-calories your body doesn't need. Alcohol never leads to good decisions and you'll regret getting that big piece of chocolate cake when you wake up the next morning! :D

Crockpot Turbofire Chili

Okay this recipe takes the cake for easiness and yumminess! AND it's made in the crockpot so that's a big plus for me :) If you don't like beans you can sub them out for green peppers, mushrooms, or any other veggie you like. Just follow the correct portion sizes so you don't overindulge. It's easy to do with this one!

Crockpot Turbofire Chili



Ingredients
1 lb. lean ground turkey
1/2 cup diced tomatoes
8 oz. whole kernel corn, canned
1/2 onion, diced
2 cloves garlic
8 oz. black beans, canned
8 oz. pinto, chili, or kidney beans canned
1 tbsp tomato paste
1 package chili seasoning
4 oz. low-fat shredded cheddar cheese (optional)

Directions
Brown turkey. Drain and discard any fat. Place all ingredients except cheese into a slow cooker. Cook for 4 hours on low or 2 hours on high. Top with 1 oz. cheese if desired.

Enjoy! Recipe serves four but we always have extra so I freeze the leftovers and have a small portion for lunch on a bed of spinach :)

Skinny Pancakes

This is a super quick and yummy breakfast recipe that I LOVE because my whole family can enjoy them! Even Cami likes them :) Bonus - there are only two ingredients. Win! It's gluten free and dairy free and there are endless options to flavor it up or leave it the same. Hope you enjoy them! <3

Skinny Pancakes



Ingredients
4 eggs
1 banana
1/4 tsp baking powder (optional)

Directions
1. Combine all ingredients in a bowl
2. Pulse in blender, with a hand mixer or even a food processor until there are no clumps
3. Heat a frying pan over medium heat, add a little EVOO or non stick cooking spray
4. Cook pancakes until they begin to bubble on one side and begin to take form. From there, flip them and cook for 30 seconds longer.
5. Serve with maple syrup if desired

OPTIONAL: If you're feeling in need of a treat toss in some chocolate chips, cinnamon, or frozen/fresh fruit :) I have a HUGE sweet tooth so this helps satisfy the craving without getting myself way off track!

Do You Have A Morning Routine?

Goooood morning and happy Sunday! I just finished enjoying breakfast with Trevor and my little turkey so of course I HAD to share a pic of her cuteness!

I know, I'm THAT mom that can't stop posting pictures of her baby...who would've thought!?


Today, I want to share with you my morning routine and how it's changed the outcome of my day. You know what I realized that all successful people DO? They take advantage of the early morning. I've been listening to quite a bit of Chalene Johnson lately (you NEED to listen to her podcasts, she's amazing!) and picked up on a few things that she's touched on - early mornings being one of them.

Before I started my fitness journey, I used to DREAD and hate on Mondays. I used to set the same alarm every night and every. single. morning. I would hit snooze over and over and over. When I finally did get up, I'd be frustrated and just feel discouraged to get on with my day. I already woke up late so what was the point of trying to do what I needed? But I found out that research shows your morning routine sets the rhythm for the rest of your day. So here are 3 simple, yet effective, tips that I've learned that will help you become that go-getter morning person you thought you'd never be ;)

1. Give Yourself 3-5 Minutes:
Don't hop straight out of bed. Let yourself wake up, stretch, relax, and most importantly, don't stress about the day to come. Don't think about the tasks that you have to do. Just lay.

2. Start With Something You Love:
It could be anything. Breakfast, shower, reading, watching the news, whatever. But just make sure you do this right after step one. Doing this will help associate morning time with happy thoughts and excitement to get your day going. I personally have started my day with a nice mug of green tea while I look through my e-mails (usually to see if there are any good coupons or sales out there ;p).

3. Exercise:
Within the first 30 minutes of waking up, work in a quick exercise routine. It's not to help you get fit or lose weight, but to stimulate your mind to get your brain pumping and get the blood flowing. I've noticed a drastic change in my attitude since I've been starting my days with a 30-minute 21 day fix extreme workout. Believe it or not, now I actually look forward to working out in the morning. It's my me-time.

So, if you set a routine similar to this one (tweak it to your own needs), research shows that you'll begin to associate mornings with happiness and joy versus anxiety and stress. I know, life-changing right!?

Anyway, usually after I get through with this part of my routine, I make my to-do list for the day and either get ready for work or do some laundry/dishes before Camilla wakes up. Doing any type of housework (or anything) really helps me feel a sense of accomplishment and even better, it makes me want to keep getting more done. Fruity Oatmeal Bake

Ahhhhh I just love FALL! This oatmeal bake recipe makes the house smell like cinnamon while it's baking and just makes me warm inside :) It's super easy and super cheap. It's a great way for me to meal prep and have a yummy, healthy snack available for whenever I get a sweet tooth! 21 Day fix approved :) Try it - I know you'll love it!



Ingredients

  • 2 cups rolled oats
  • 1 cup strawberries (any kind you want!)
  • 1/3 cup blueberries
  • 1/2 cup mini chocolate chips (optional)
  • 1 tbsp cinnamon
  • 1 tbsp vanilla extract
  • 1 tsp baking powder
  • 1 cup chopped nuts (any kind you want, I used almonds)
  • 2 cups unsweetened Vanilla Almond Milk
  • 1 egg
  • 1 banana, sliced (I added these the second time I made this and LOVED it!)
  • 3/4 cup maple syrup

Directions

1. Preheat oven to 350 degrees.
2. Generously spray a 9x13 pan with coconut oil spray (any cooking spray would work).
3. In one bowl, mix the oats, syrup, baking powder, half the nuts, cinnamon, 1/2 the chocolate chips, and 1/2 the berries.
4. In another bowl, mix the egg, vanilla, and milk.
5. Spread the oatmeal mix into the pan. Press into the corners to make sure it's even!
6. Pour the milk mixture over the oatmeal mix.
7. Top with the remaining 1/2 chocolate chips, 1/2 berries, and sliced bananas.
8. Bake for 35 minutes.
9. Enjoy! :)

Greek Turkey Burgers

I've had a few people ask me about it so I finally got around to posting this TO DIE FOR turkey burger recipe! It has so much flavor and the best part - it felt like a cheat meal and it wasn't. Not to mention, Trevor actually liked it! Double win :) I'm definitely adding this recipe to my monthly (if not weekly) meal plan. Try it and I know you'll love it - especially if you love Greek food!



Turkey Burger Ingredients
  • 3/4 cup grated zucchini, squeezed
  • 1 1/2 lbs 93% lean ground turkey
  • 2 cloves garlic, minced
  • 1/4 cup red onion, minced
  • 1 T oregano
  • 3/4 tsp sea salt
  • 3/4 tsp black pepper
  • 1/3 cup Feta cheese, crumbled
  • 1/2 tsp lemon juice
Tzadiziki Ingredients
  • 1/2 cup plain Greek yogurt
  • 1/4 cup cucumber, grated and peeled
  • 1 tsp white wine vinegar
  • 1/2 tsp garlic powder
  • 1/4 tsp dill (I left this out because I forgot to buy some!)
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
Greek Salad Ingredients
  • 1 cucumber, peeled & diced
  • 2 medium tomatoes, diced
  • 1/4 red onion, sliced (or diced depending on how you like it!)
  • 1/3 cup Kalamata olives (I forgot to buy these so I used regular black olives)
  • 1 tsp oregano
  • Sea salt to taste
  • 1 T Feta cheese, crumbled
Instructions
  • 1
    Grate the zucchini and then squeeze the moisture out with paper towels. It's crazy how much more moisture it has than I thought!

    In large bowl, combine all of the Turkey Burger ingredients and mix well.

    Divide into 6 equal patties.
  • 4
    Cook burgers on medium heat, about 5 minutes per side or until no longer pink in the middle.
Greek Salad Directions
  • Combine everything and mix it up! Refrigerate until you serve :)
Tzadziki Direction's
Combine all ingredients in a small bowl and mix well. I topped my burger with it and it was literally melt in your mouth goodness!

    Tzadziki - I used a couple tablespoons and counted it as a condiment
    Greek Salad - 1 Green (cucumber, tomato, onion), 1/2 Orange (olives), 1/2 Blue (Feta) 
    -All depends on how much you serve yourself!

Hi there! I'm SO excited you're checking out my first blog post. I'm Andrea and I have a beautiful daughter, Camilla and an amazing future husband, Trevor (also a super amazing daddy!). I was born and raised in good 'ole Texas, y'all! But no, I don't own a horse or a pair of cowboy boots (yet). I'm 22 and have big dreams and goals for the future of my little family, especially in a financial sense. I am determined to get organized and stick to my budget so I can really start to plan for our future. I want that little brick house with a white picket fence and I want to eventually be able to be a stay at home mom that works from home. Buuuuut I'll get there and I KNOW I will with my new and improved attitude!!

So I'm sure you're wondering why I randomly decided to start a blog! First off, I've always enjoyed writing and sharing little moments of my life. I've always considered starting a blog but never really could commit to telling my own thoughts, ideas, fears, etc. in social media. But I recently finished my first round of 21 day fix and it has completely changed my life guys! It's motivated me to tell my story to you and every single person that will hear it. Like, I still can't believe how much I lost! 15 pounds and 25 inches!! I mean seriously, I've tried everything! SO many other programs and products that really just never stuck. What has hooked me with Beachbody is that it's really not a diet, it's a lifestyle change. At first the idea of changing my lifestyle really didn't appeal to me. Uh no I'm not giving up my Snickers and Hot Cheetos!!! Can I get an Amen!? But I'm not here to preach to you about Beachbody and how amazing it is blah blah blah (BUT it really is amazing). I'm here because I want to inspire you to be the best person you can be!

This program has taught me so much about portion control and healthy habits that I just want to share with everyone how amazing it is. If I of all people can do it, ANYONE can. So that's what brings me here. I want to share my fitness journey with you by posting recipes, stories, workouts, meal prep ideas, time management tips, and really whatever other random thing I think of! :) I want to help YOU reach your goals and motivate you while I strive to reach mine. I want to be held accountable for MY life and I want you to help me do that as well!

Basically, I just want to share my life and get on a personal level. Get to know me through my posts :) I'd love to coach you to be the best and healthiest person you can be as I strive to do the same! <3
